Brewer

Time at Southey: since April 2021

What brought you to Southey?

A series of lockdown misfortunes which turned out to be a blessing in disguise. I worked in events before lockdown, which ended for obvious reasons, then was keeping myself afloat doing temp work when I saw the ad for brewery assistant. I’ve always been good at propping up a bar, so thought it would be a great opportunity to learn more about the process!

What's your favourite beer that we brew and why?

That’s like asking to pick your favourite child! I have a personal attachment to Jason Waterfalls as it was my first recipe, and love the refreshing bitterness of it, and the name still makes me smile! I do love the smell of the brewery when brewing a stout though!
What do you like about working here/ what we do here? I love the freedom I’m granted to explore things I’m interested in! I’m met with encouragement and enthusiasm when I want to come up with and trial new brews. I’ve also been given the freedom to start up
and host a monthly open mic night, which is growing each month, and is now a lovely little community of like minded, friendly and supportive people!

Is working at a brewery different from what you thought it would be?

Yes and no. It can be physical, tough work sometimes, which I kind of expected, but that just makes the post work pint even more deserved!
I feel it’s certainly less exclusive and ‘snobby’ than I thought it was gonna be. I had expectations of everyone standing around talking about the subtle notes of plum in the latest porter, or a trace memory of those sweets you used to have out of the little tin in your Nan’s car coming through in the latest batch of NEIPA. And while there certainly is some of that, it feels less about trying to please the beer aficionado’s and more about brewing great beer that everyone can enjoy!

What do you like to do with your spare time?

I love going to gigs/shows/live entertainment, which is one of the main reasons I love living in London. There’s always so much to see and do. From comedy to festivals and immersive theatre. If you need a recommendation - just ask!
